4 (6-ounce) cod or catfish fillets Salt and black pepper to taste 1 lemon, cut into wedges 1 (8-ounce) container spreadable light cream cheese 2 tablespoons chopped fresh dill weed Directions: If using thicker fillets, pound them down so they are about ¾-inch thick 1. Preheat oven to 400°F (200°C). Sprinkle both sides of the fish fillets with salt and black pepper. 2. If you're using an indoor grill pan, heat it up on the stovetop over medium-high heat as well (400 degrees F). spray your cooking surface with cooking spray first.. 2) Sprinkle both sides of each piece of fish evenly with salt and freshly ground black pepper - using about 1 teaspoon salt and ½ teaspoon black pepper in total . 3) In a small bowl mix together the olive oil, nectarine slices and balsamic vinegar.. 4) Scatter the nectarine mixture over top of each piece of grilled fish - making sure you get some fruit on each piece .. 5) Grill for 6 minutes per side - if using an outdoor grill , lid closed , flipping once OR about 8 minutes per side if using an indoor grill pan , flipping once .... 6) Once it's cooked through , remove from heat , sprinkle with some fresh chopped basil leaves and serve
