In a large bowl whisk all ingredients for the marinade aside from the salmon and pineapple slices . Add the salmon and pineapple slices to the bowl , making sure everything is coated in the marinade . Cover with cling wrap and put in the fridge for 30 minutes – 2 hours (the longer you leave it , the more intense the flavours will be ). Preheat your grill or griddle pan on medium high heat . Once hot , add your onion and garlic cloves (you can discard these once they've softened and caramelized a little ). Grill or griddle for a few minutes each side until nicely charred then remove from heat . Grill or griddle your salmon fillets for 3-5 minutes each side depending on how thick they are (they should be cooked through but still moist ). You can sauce them with whatever left over marinade you have if you like too ! Once everything is cooked through , assemble on plates or in bowls and serve .
